I woke up energized. While eating breakfast, I shared what I had learned the evening before with Phil. I asked Phil how we could change our lives together. Of course, he said he didn't know. We (I) decided we would eat one vegan meal a day. The reality of it was that he said "OK", but was not as motivated as me.
Breakfast: cereal and milk, toast with butter and jam, coffee for Phil. Oatmeal for me.
I went to the store and bought the items to make the recipes we had tasted at Session 1: Spicy 3-Bean Chili and Mango Avocado Salsa. I think having the food items in the house. I tend to have dry beans, and am trying not to cook with canned foods, but purchased canned beans for this recipe. BTW, it is fabulous!
Lunch: I made the Spicy 3-Bean Chili.*
Dinner: The chili was so good, we had it again for dinner with bread. We were full and satisfied.
*One thing I am going to do here is put links to the recipes I use and send you to my recipe website. I only put recipes on it that I love so I can share them with my family and friends.
