Day 3: Saturday

I am writing is a few weeks after day 2, but what I can remember is that I made the Mango Avocado Salsa for us to snack on prior to dinner. I served it with purchased tortilla chips and it was delicious. I worry about the avocado turning brown, and neither of us was sure we would like it, so I cut the recipe in half. The following day, I made the "other half" of the recipe.

If you are not watching your calorie intake, this may be a little high calorie to eat twice in two days. It is packed with fiber and vitamins, though. I think it would really help those trying to reduce sugar and eat vegan get the flavor and satiating fat to important to stick to the lifestyle.
