Day 9: Mom to eye doctor

Friday was one of those days that are bitter sweet. We had to take Phil's mom to the doctor, which is taxing for all involved. We had our usual breakfast and off we went. Thankfully, Emily didn't want to go out for lunch or donuts. After we left mom to eat lunch with her friends, we went to the local taqueria. It can be a little challenging to eat vegan at a Mexican restaurant, but you can usually choose vegetarian. Phil had he "go to" burrito supreme" and I chose a vegetarian tostada. It was yummy with guacamole. She asked if I wanted it with everything. Being a Mexican from a family who ate healthily, to me "with everything" meant beans, lettuce, cheese and avocado. It came with onions and some sauce under the guacamole. I was not sure what it was, but probably some sour cream sauce. * Note to self - specify what you want on your tostoda or you will get goodness knows what! I like taquerias because they always have vegetables at the salsa bar.

Vegan Mexican Restaurant tips - ask for:
  • Whole beans, because sometimes beans are refried in lard (AKA pork fat). No one needs refried beans anyway. But that's just me. When I make tostadas at home, the whole beans can sometimes roll off the tortilla, so I will smash them up in the pan. They are just fine.  
  • Salsa 
  • Lettuce
  • Guacamole
  • The tortilla may be fried, but they rarely fry in pork fat. Ask, though.
  • Specify no cheese or sour cream. 
  • Tortilla choice - corn. You can order soft tacos and ask for the same fillings. That way you can avoid the fried tortillas altogether or at least it leaves room fro a few extra chips. ;-) 
Tortillas - I can't say never, but I generally do not like flour tortillas. For one, they are bland. Secondly, they contribute to a rapid rise in blood glucose. I prefer corn tortillas to scoop and gather my Mexican food. My exception is the homemade tortilla, hot off the comal, with fresh avocado. YUM! and worth the occasional slip. A treat not to be missed. 

After our visit to the La Play Taqueria and the doctor with mom on Friday, we were both exhausted and I think we just snacked for dinner. Almonds. Popcorn. Whatever we could find. Oh the glory of not having junk food in the house.
