Wednesday morning I had overnight oatmeal for breakfast and it was to good, I took it for lunch as well. Yikes. Lots of fruit, too. I went downstairs and bought a small bowl of Posole for lunch as well. Definitely a break from the vegan diet. Posole has a pork broth and contains pork meat. It was delicious, though.
For dinner we had tome leftover pinto beans and some sopa de fidelo, so I bought some flour tortillas and made burritos. I began to remember how much work it is to prepare vegan meals. It takes a lot of forethought and preparation of grains, beans, and shopping for fresh vegetables. In my last effort to follow a vegan lifestyle, I realized I could not make food look and taste like meat-based meals, but contain no meat or cheese.
I think I need to add a couple of meals a week that are vegan in nature with few high glycemic foods. This meal was getting closer, but I am not a fan of flour tortillas so burittos may be out. I think we could eventually leave the cheese out of the burittos as I find an acceptable cheese alternative for Phil.
